One day there were a bunch of heirloom tomatoes sitting on my counter begging to be used for something fabulous. That day, this fresh heirloom tomato salsa was born.
HEIRLOOM TOMATO CHARM
There’s something magical about Salsa. It tastes good on everything – chips, eggs, in a salad. Most tomato salsa recipes call for plum tomatoes or larger tomatoes, but I like to use grape, tomato or now, heirloom varieties to spice things up a bit.
There’s something unique about the flavor and color varieties you get in just one container of heirloom tomatoes that add a unique taste with each bite.
SUPER EASY TO MAKE
This recipe takes like, 5 minutes. The longest part is chopping up the tomatoes and onions (and for me, finding a pair of safety google so my eyeballs don’t scream while I’m chopping).
This recipe makes a pretty good size batch to use throughout the week for various snacks or meals. I store it in a mason jar in the fridge and take what I need when I need it.
LOW-CARB, PALEO & KETO FRIENDLY TOMATO SALSA
This tomato salsa is perfect for anyone eating a low-carb, paleo or keto diet. No sugar and less than 2 carbs per 2 TBSP serving.
If you’re feeling like you need some chips to go with it, there’s a grain-free version that makes a good substitute (watch your serving size though!)
