Changing the way I eat has changed EVERYTHING. There’s the physical stuff (weight loss, great skin, better sleep) but there’s the mental side of things too. Like the part of me that had a mental breakdown when I decided to go keto and then realized I’d probably never eat pumpkin pie again.
Luckily, there are plenty of keto pumpkin recipes out there and this one? The best I’ve found so far.
KETO PUMPKIN BREAD THAT TASTES LIKE PUMPKIN PIE?
Yes. It really does. My daughter and I whipped this up for my hubs birthday- he loves pumpkin pie and while we didn’t think it would taste anything like our fall fave, I did hope it would taste pumpkiny. It didn’t disappoint and totally threw a curveball by impersonating pumpkin pie to a tee.
I wish the pics were better, but I snapped them quickly in between singing “Happy Birthday” and realizing we hit the Fall jackpot.
LOW CARB, SUGAR-FREE AND GRAIN FREE
I’m super stoked on the sugar and grain free desserts I’ve been making these days (like, these Sunbutter Cookie Balls and Chocolate Chip Cookies – my own recipes) and I totally wish I came up with this recipe myself, but no.
While I did adapt it a bit (I omitted the pumpkin seeds), I snagged this keto pumpkin bread from Wholesome Yum (same fab creators of these Keto bagels I make on the regular).
It’s perfect for anyone on a paleo, keto or other diets that omit inflammatory foods like sugar and grains and keep carbs low.
ONLY 4 NET CARBS!
This keto pumpkin bread yields around 8-10 slices (at least mine did) and came in right around 4 net carbs (possibly less). It’s a little over 200 calories, 18 grams of fat and 8 grams of protein per serving. Note – This nutrition info is from the original recipe, so if you make it on your own, I recommend recalculating it using your own ingredients and serving slices.
Either way, it’s absolutely delectable – crunchy outer shell makes it feel like it has a crust and the insides? As moist, dense and flavorful as the real thing.
