Anyone else like…the busiest they’ve been all year? I am losing my brain over here. Our house has caught a little cold which isn’t helping. And, we’re being accosted by sweets in every direction. Thankfully I have some willpower and lean to easy salads to keep things real during the holidays.
EVERYTHING BUT THE BAGEL SALAD
I feel like salads can be super complex or super easy. There’s not really a middle ground, at least in my opinion. I made this salad (pic above) last week and it was so easy my 4-year-old could have made it (2 cups spinach, a few cherry tomatoes, some shaved asiago, slivered almonds, EVOO, lemon juice and Everything But the Bagel Seasoning). I also make the salad below (all the time) and while it is easy it is a bit more involved.
GOAT CHEESE & ROASTED VEGGIE SALAD
This salad is a staple in our house – filled with healthy fats and green veggies, like garlic roasted zuccinni and cherry tomatoes. Super filling and delish!

TRIPLE BERRY SPINACH SALAD WITH PECANS
This berry salad looks AMAZING, doesn’t it? I’d personally skip the candied pecans and just add them raw, but if you like sweet in your salad this oughtta do it. It’s got spinach, strawberries, blackberries, raspberries and blue cheese for the win. Grab the recipe over at Chelsea’s Messy Apron.
BLT SALAD BOWL
I miss traditional BLT’s (I don’t eat grains / bread), but LOVE a good BLT salad as a sub. They are super easy to make (sans the bacon which can be annoying but doesn’t take too long) and taste just like the real thing (especially if you add croutons)!. This recipe by The Londoner is a good start – includes an easy balsamic, mustard, EVOO dressing.
HEALTHY GLOW BROCCOLI & LEMON WINTER SALAD
This one’s a bit more involved. I won’t lie. BUT, if you’re meal prepping for the week, you can prep some of the ingreidents ahead of time so all you have to do on easy salad night is dump em’ in a bowl and eat your heart out. You can also get as involved or not involved as you’d like with the garnishes – i.e. grab ready-to-eat pomegranite seeds from your produce aisle and skip the farro. CHICKEN AVOCADO PEAR
Whoa. This looks so good. Make it easy by roasting up your chicken and frying up your bacon when you meal prep on Sunday. When you’re ready to eat, slice up your pears, grab the rest of the ingredients and OMG…add blue cheese. The recipe is at Add a Pinch!
