Oh, man….these ham and cheese roll-ups were good. AND, they were super easy. AND, my daughter loved them. Sugar-free, grain-free, low carb winning for the whole fam – perfect for lunch, brunch or an appetizer tray.
I don’t know about you, but something magical happens when I can get the flavors of an entire sandwich in one bite (without losing half the ingredients out the bottom and sides).
Brunchy foods like this are my fave to create – when we were eating grains I used to make a super yummy ham and cheese crescent roll hot-pockety-thing. That’s what inspired these low carb, roll-ups!
ROLL EM’ UP
I created this pizza roll-up not too long ago and decided to use it as the base for this recipe. I make an almond flour and cheese based dough, add some nitrate free black forest ham and shredded cheddar cheese, roll it up and bake it until everything is melty on the inside – crispy on the outside.
HAM AND CHEESE HAS MY HEART
Ham and cheese is the best isn’t it? Whoever decided to put the two together and call their job done is my hero. You can use whatever kind of ham you like – I had some left over black forest deli-style ham left over from when we had houseguests, so I used that (6 pieces total).
Any ol’ cheese will do too! I used cheddar to keep it classic for my 5 yo, but I bet swiss would be SO. GOOD or feta? Stay tuned. I’ll try it and let you know if it’s good or not.
THE DOUGH IS FOOLPROOF
While many fathead style doughs call for eggs, I completely omit them for this recipe. When I first came up with the pizza rolls I wanted to see if removing the eggs helped the dough get a bit more “crispy” around the edges when baked.
And, to my delight – it totally works. The other trick for this particular recipe is melting about a tablespoon of butter and brushing it on the dough before you layer on the ham and cheese. When it bakes, it creates the most delicious flavor and texture.
THEY ARE SUPER FILLING
These roll-ups may look small, but they are SUPER filling. You could totally get away with eating just 3 of them and feel full (pair it with a yummy veggie to make it a meal!).
They are just 2.5 net carbs per roll, so if you are eating strict keto, plan accordingly (around 7.5 net carbs for three of them – add a super low carb veggie and you’re golden).
