I love an easy dinner. If you follow along, you know almost all of my recipes are foolproof and pretty quick to make. I’m a busy Mom and need simple recipes that fit within my diet but also don’t take 10 hours to prepare. Hello, Sweet Beef and Broccoli!
SHEET PAN EASY
I love sheet pan meals because you pretty much dump all the ingredients into one place, stick em’ in the oven and call your job done. We make this Sausage and veggie dish a ton and I love making a couple of batches and storing it for weekly lunches.
The hubs was craving something with an Asian flair, so I took my love for easy peasy and his love for a chopstick dish and came up with this easy Beef and Broccoli meal.
LOW CARB, SUGAR-FREE + KETO FRIENDLY
This is a great recipe for my fellow keto peeps because there are no grains, breading or sugar and it’s low carb. If you’re eating grains or don’t care about the carb count too much, you can add some brown rice, quinoa or other ancient grain.
We had a bit of my coconut cauliflower rice in the fridge and the hubs mixed that in for some added sweetness and texture.
MARINADING THE MEAT (CAN YOU SKIP IT?)
The cool thing about this dish is that you don’t have to marinate it for too long. I always forget to marinate meat, because when I prepare a dish, I want to do all the jobs in one sitting.
But, this time around, I was using frozen meat, so I took the time to marinate it in the fridge for around 30 minutes once the meat thawed. Honestly, I don’t think it would make a gigantic difference if you skipped the marinating part.
Side note, I cannot LIVE without this meat thawer, gadget thing I got in my Spring Breo Box. I cannot tell you how magical it is, to pull meat out of the freezer and have it thaw in just about under an hour. If you want more deets on it, just let me know and I’ll share! But basically, it uses an energy generating thermal liquid (SCIENCE!) to thaw your meat (and any juices drip into the little reservoir via the itty-bittiest angle). Anyway, I still don’t get how it works because you don’t plug it in or use batteries or anything. BUT, I do know I use it ALL the time. FRESH BROCCOLI WORKS TOO!
Here’s the thing – I love fresh ingredients BUT, there are so many days I just don’t wanna with all the prep and chopping and zero time I have in my life. So, for this recipe, I used frozen broccoli.
If you want to use fresh, go for it! You’ll just need about a pound and you’ll probably want to stick it in the oven solo (sans the meat) for like, 10 minutes to make sure it loses that fresh broccoli crunch.

You can snag my Beef and Broccoli recipe below! Make sure you spray your pan with coconut oil spray or any other spray you prefer just to make sure the meat doesn’t stick.
And, while it says to cook it for 10-15 minutes in the recipe, make sure you keep in mind your meat temp preference (if you like it moo’ing, you’re gonna wanna shorten that cook time). Chopsticks optional! ENJOY!
