Is it Halloween yet because I feel like it’s been Halloween for a hundred years. While we are all candied out over here (with bucketloads forthcoming), I’ve got no shortage of sweet recipes to share this week (savory ones too, including a delicious quick, easy dinner that you’ll have done in 30 minutes or less). Everything I’m loving and this week’s meal prep below (plus some exciting “housekeeping” and gift guide news)!

We covered pumpkins in sequins this weekend, and, I made a butterfly costume on the fly for my 5yo who decided her adorable pegasus costume wasn’t “cute enough”. This is what my face looked like when I realized there were 16k sequins stuck in the cracks of my dining room table after said project.
The pumpkins actually came out really cute (I shared them on Instagram stories!) and I’m super proud of the “antennas” I created out of piggy buns and fluffy pipe cleaners. I’m not sure who abducted me and implanted me with all these craft skills, but whoever it was, they made one little kid super-duper joyful.
Before I dive into meal prep links and love, I should mention that this little series will be on hold for a few weeks.

Meal prep ideas + baking tips
Instead of planning your entire week, this time around I’m dropping in some meal prep ideas below for you to mix and match based upon your weekly schedule and macros! As always, everything is sugar-free, grain-free, low carb and (mostly) keto-friendly.
Almond Butter + Jelly Muffins: This recipe allows for easy swaps based upon what’s in your pantry. Feel free to switch out the almond butter for peanut butter or any other nut butter you choose and use jarred jelly if you have it on hand and don’t feel like pureeing fresh berries.
Cheese Bread: This stuff is incredible (and very filling!). Feel free to add bacon bits to the batter before you bake it to take it to the next level.
Paleo Waffles with Sugar-Free Syrup: I pick up frozen paleo waffles (made by Birchbenders, who also makes this Keto pancake mix) and top it with a very light drizzle of sugar-free syrup. Bacon makes it betta!
California Chicken, Veggie + Avocado Bowl: Feel free to hack this further and make it low carb and keto-friendly by swapping out the regular rice for cauliflower rice (we’ve done it and it’s scrumptious!).
Rotisserie Chicken & Cauliflower Au Gratin: My brand-spankin’ new recipe on the blog this week! You’ll be eating in less than 30 minutes. Super quick and easy.
Bagel Sammies: Not my recipe, but absolutely delish! We add everything but the bagel seasoning or sesame seeds and either eat with a little cream cheese or butter or make a sandwich with some deli meat, cheese + a hint of mayo.
Simple roasted salmon + Asparagus: I’ll be sharing this recipe at some point in life, but since it’s not on the blog yet – here’s what we do: Preheat oven to 400 degrees and in a large glass baking dish, lay your asparagus side by side (make sure you cut the ends off first) and drizzle with olive oil. Top with everything but the bagel seasoning (or whatever seasoning you choose) and sprinkle with some parm cheese (optional). Roast for 20 minutes. While it’s roasting, add salmon to a glass baking dish. In a small bowl, mix some feta cheese, EVOO + minced garlic (eyeball it all and taste as you go!). Top the salmon with your feta mixture and pop in the oven for 20 minutes (keep your asparagus roasting!). Wait for the timer and ENJOY!
Veggie + Goat Cheese Salad: I make this once a week! If you want to make it a wee-bit-sweet, just sprinkle a little bit of stevia on top (like, a tiny bit). The sweetness goes so well with the flavors of this dish!
Pumpkin Spice Muffins: These taste amazing with a little butter (or a simple cream cheese frosting – use about 2 ounces of cream cheese and a 1-2 tsp of swerve, plus a 1/2 tsp of vanilla. Mix with a spoon and top your muffin for a treat!)

This little dish couldn’t be easier to pull off (like, you could actually do it with your eyes closed if you wanted to be a true kitchen rebel). You can find the complete instructions/recipe here!
