Happy, happy Monday! What a day already (and it’s only 830!). As I sit here staring blankly at my calendar and to-do list, I realize I have about 7k things to do between now and next Monday in preparation for Thanksgiving. So, I thought I’d keep this meal prep, links and love post short, sweet and straight to the point because I know YOU’RE busy too. Cool-cool-cool?

Meal Prep Tips + recipes for Thanksgiving!
If you’ve been following along, the recipes I’ve been sharing these past few weeks have Thanksgiving written all over them. I created a simple, skillet turkey, homemade cranberry sauce, 15-minute cauliflower rice, some balsamic roasted radishes (coming this week) and some delicious sweet treats to enjoy before, during and after the big day.
The Star of the show is this skillet roasted turkey breast. It is not only easy (and roasted in a cast-iron skillet – what?), it’s also flavored with savory spices (and a hint of something you might not expect) which takes the flavor of the meat to the most joyful of places. Oh, and there’s lots of butter. Lots and lots of butter. Tip: Baste it every 30 minutes. Basting is controversial, meaning that some chefs think it’s a waste of time. I beg to differ and baste, baste, baste.
Top your turkey (and other Thanksgiving thangs) with this sugar-free homemade cranberry sauce. It is quite possibly one of the easiest things to make and gives off all those holiday vibes you’re looking for this time of year. Stores well in the fridge for up to two weeks! Tip: Fill a tiny mason jar with some sauce before you serve it up and use it for leftovers during the week!
If you love mashed potatoes but don’t want all the extra carbs, swap for this 15-minute cauliflower mashed potato recipe. It’s easy, creamy, buttery.., just try it. I’ve also got some balsamic roasted radishes coming this week, so stay tuned! Tip: Use organic, steam in bag cauliflower. It cuts the prep time WAY down and tastes just as delicious as a head of cauli (without all the cutting and steaming and stuff).
Nosh on thesesugar-free candied almonds while you’re pulling it all together (the whole meal takes about 2 hours and most of that is passive roasting time). Tip: Top your popcorn with them like we did (you’re welcome).
For dessert (sugar-free, low carb and grain free, of course)? These pumpkin spiced latte cupcakes (with espresso buttercream), these “accidental” pumpkin pastries AND (yep – I said “and”) these pumpkin chocolate chip cookies (with browned butter, who dis?).
You can make these apple cider donuts for brekky 🙂 Tip: Make ahead and store in the fridge in an airtight container. Packs well in a suitcase when you’re road tripping for the holidays.
