SUGAR FREE ALMOND BUTTER BLONDIES (AN EASY KETO DESSERT)!

Guys.  This might be my most fave keto dessert evs.  These are so good I’d eat them whether I was eating a keto diet or the donut diet (just go with it guys.  I haven’t had a real donut in months).

PERFECT KETO DESSERT FOR AN EVENT

I really wanted a cookie bar type dessert to bring to a BBQ we went to the other day – it had to be a keto dessert because we’re doin’ the keto thang, but I also wanted other non-keto peeps to like it.  Like, I didn’t want to just show up at a friend’s cookout like “oh, hey guys we made dessert for ourselves but you can’t have it because you don’t eat like us“.

Anyway, I came across a bunch of keto cookie bar type recipes but they were either way too complicated or not the flavor I was looking for.  Almond Butter blondies kept coming up in my search and eventually, I decided I was going to figure out how to turn a regular dessert into a keto one.

The net carbs on this one are just over 6 net carbs, so they are not the lowest keto dessert out there, but if you have room (and we always do), they are filled with good, healthy fats and did I mention delicious?

ITS HARD TO EAT JUST ONE

I’m not gonna lie.  It was HARD (like, really, really hard) not to eat the entire pan of these things.  But, as part of this new lifestyle, I’m learning to dial back the wild bear that lives in my mind and my belly and eat dessert in moderation.  It’s not easy. But, I feel so much better since I stopped eating sugar like it was life-juice.

TWO RECIPE VARIATIONS (OOPS!)

A quick note on this recipe:  The image in the Pinterest graphic above is actually the second batch I made (with baking powder). The first batch I made didn’t include baking powder – accidentally used whey protein instead.  To be honest, either version is totally fine, just depends upon the texture you like best. If you want your bar cookie to be a solid “bar”, use the baking powder.  If you want it to be kind of crackly, moist and sorta-flaky, use the whey protein.  We liked it both ways, but maybe even liked the whey version better.

ALMOND BUTTER BLONDIES (AN EASY KETO DESSERT)!
These sugar-free almond butter blondie bars are easy to make and perfect to bring along to a bbq, party or other event. Crowd pleaser whether you're keto or not!

If you're looking for a great keto dessert to bring to your next bbq, these sugar free almond butter blondies are amazing.
Instructions
  1. Preheat oven to 350 degrees and spray a 9 x 13" baking dish.
  2. In a large bowl, cream together the almond butter and coconut oil until smooth.
  3. Loosly whisk the eggs in a small bowl and add them (along with the heavy whipping cream) to the coconut oil and almond butter mixture. combine well.
  4. Once combined add the dry ingredients (almond flour, erythritol, whey protein (or baking powder) and mix. NOTE: If you don't mix the dry ingredients together before combining with the wet the finished product will look marbled. If you do, you'll get a smoother looking bar. Then, fold in the chocolate chips.
  5. Spread the mixture into the baking dish and use a spatula to even everything out. Bake for 20-25 minutes. When done, they will be crispy on the edges and softer in the center. Let cool if you can wait! They taste best straight outta the fridge!
