ALMOND BUTTER BLONDIES (AN EASY KETO DESSERT)!
These sugar-free almond butter blondie bars are easy to make and perfect to bring along to a bbq, party or other event. Crowd pleaser whether you’re keto or not!

Ingredients
  • 1/3cup extra virgin unrefined coconut oil
  • 3/4cup almond buttermake sure there’s no added sugar!
  • 2large Eggs
  • 3tbsp heavy whipping cream
  • 2cups Almond Flour
  • 1/2cup erythritol (or other sugar sub)I actually use a little less than 1/2 cup to make the sweetness less overpowering
  • 1/2tsp whey protein OR baking powderWhey = crackly, moist and sorta-flaky | baking powder puffs them into a solid bar
  • 75 grams sugar-free chocolate chipsMake sure they’re sugar free!
  • Coconut Oil Cooking Spray(or spray of choice)
Instructions
  1. Preheat oven to 350 degrees and spray a 9 x 13″ baking dish.
  2. In a large bowl, cream together the almond butter and coconut oil until smooth.
  3. Loosly whisk the eggs in a small bowl and add them (along with the heavy whipping cream) to the coconut oil and almond butter mixture. combine well.
  4. Once combined add the dry ingredients (almond flour, erythritol, whey protein (or baking powder) and mix. NOTE: If you don’t mix the dry ingredients together before combining with the wet the finished product will look marbled. If you do, you’ll get a smoother looking bar. Then, fold in the chocolate chips.
  5. Spread the mixture into the baking dish and use a spatula to even everything out. Bake for 20-25 minutes. When done, they will be crispy on the edges and softer in the center. Let cool if you can wait! They taste best straight outta the fridge!
