If you are eating a low carb diet, bread is on the “don’t do it” list. But, that doesn’t mean you can’t have bread at all! This grain-free, paleo and keto friendly bread is de-lish. It tastes even better than that carby stuff you buy at the store and it’s super easy to make. We prep it ahead of time and eat it throughout the week (makes a great breakfast, lunch or snack)!
IT ACTUALLY TASTES LIKE BREAD!
When the hubs and I decided to switch to a keto lifestyle, I quickly learned there are TONS of great recipes out there to make you feel like you’re still eating the carby stuff, even though you’re not. We haven’t tried any of the other keto friendly bread out there yet (cloud dough? Have you heard of it?). But, we have adapted this version from a couple of other recipes and make it on the regular.

The cool thing about keto friendly stuff is that it can often fit well in grain free and paleo diets as well. So, you don’t have to be doin’ the keto thang to enjoy this magical stuff. Yey for all!

GRAIN FREE, PALEO & KETO FRIENDLY CHEESE BREAD
This grain-free, keto, and paleo friendly bread is delicious. It tastes even better than that carby stuff you buy at the store and it's super easy to make. We prep it ahead of time and eat it throughout the week (makes a great breakfast, lunch or snack)!
Preheat oven to 300 degrees and spray bread loaf pan with coconut oil cooking spray
In a medium bowl, whisk together the almond flour, baking powder and salt. You want to make sure the almond flour isn't lumpy.
In a small bowl, whisk together the eggs and sour cream until smooth.
In a separate microwave safe bowl, microwave the butter about 30 seconds or and stir it up (should be melted). Let sit.
Combine the dry ingredients (almond flour, baking powder and salt) with the wet (eggs & sour cream) and mix well so its thoroughly combined.
Mix in the melted butter and fold in the cheddar cheese.
Batter will be sticky (this is okay!)
Spread batter into loaf pan and bake for 40-45 minutes. Toothpick will come out clean when done. Top with butter and eat warm!
If meal prepping: store in air tight container in fridge. Pull out one slice at a time and microwave for 15 seconds. Top with butter, cream cheese, marscapone or nothing at all!
SERVING SIZE: 1 slice of bread
