OMG, we are so incredibly obsessed with this salad combo these days, I just had to share it! It’s super easy to make (involving some extra prep, but nothing over the top) and is absolutely delicious. Great for meatless Monday!
A SALAD WITH SASS
I know that sounds totally weird, but this salad is a sassy little thang. I love all kinds of salads, but I always find (or gravitate) towards recipes that have some type of meat as the star. This one is filled with nutritious, healthy veggies, fats, and zero meat. The flavor combos are to die for.
OVEN ROASTED VEGGIES
The oven roasted veggies make this salad amazing. You’ll need around 40 minutes to roast them up, so you can do it ahead of time or pop them in the oven while you’re cleaning up the kitchen (that’s what I do)! You don’t want to shortcut this process – the longer the roast, the better the texture and taste.
And, you want to be sure to use parchment paper for the zucchini. It makes them nice and crispy and creates less mess/clean up.
KETO, PALEO, GRAIN-FREE, SUGAR-FREE, AND VEGETARIAN
This salad is great for anyone, any diet. It’s keto friendly, paleo, grain-free, sugar-free and vegetarian. We are former sugar addicts loving the sugar-free lifestyle (especially these Almond Butter Blondies). OMG.
